One of the main attributes of Ukrainian Christmas Eve is twelve traditional dishes on the table. Depending on the region, they vary, but their number is unchanged. In addition, there are songs everywhere, and the ingredients are mainly of vegetable origin, and at the same time, everything is tasty and nutritious. Some of these dishes are prepared only for Christmas. “Taste” resembles this list.
Deruni
200 g of light mushrooms
2 cloves garlic
Greens: dill, parsley.
Wash and peel the mushrooms.
We clean carrots, onions, potatoes.
We wash the greens to dry them.
Finely chop mushrooms, onions, carrots. Put to fry in a pan.
You can also grind everything to the consistency of minced meat, which will be used to fill the dumplings.
Grate the carrots on a fine grater. Fry in oil.
Fry the filling so that the onion becomes soft.
Add boiled mushrooms.
Grate 2 cloves of garlic on a fine grater. Grate the onion, grate the potatoes, drain the liquid. Add salt and pepper to taste.
We set aside the minced meat that was fried in a pan to cool.
For Christmas balls, we do not add an egg, only flour.
Add 1 tbsp. flour, knead the potato “dough” well.
Heat a frying pan with oil.
First, we spread the “lower” part of the dough with a spoon, add the filling in the middle, cover the dough with a spoonful of potato dough on top.

100 g of warm water approximately 40-45’C
It should last longer than 30 minutes.

Dough for curling iron
150 ml of warm milk or water. If fasting, milk can be replaced with water.
100 g of sugar and 50 g of honey to make a sweet dough. You can replace honey with sugar, and vice versa, but there must be a little sugar.
You can add turmeric, which goes well with fruit fillings.
The dough should stand for an hour, when it no longer grows, but rather sets, then you need to start working with the dough. Knead the dough very carefully. You can use a food processor, knead the dough at low speeds.
Oil is added to this dough at the very end, when the dough is practically kneaded. the dough should be tight, gradually add flour. Add salt at the end. If you add salt earlier, it can destroy the live yeast and the dough will “sit”.
So that the apples remain bright, they should be soaked in lemon juice.
Peel apples and pears, select the middle.
Cut into slices. Large ones are better, then they will not give much juice. Dry a sweet bun, shortbread. Chop and roll apples, pears (as for open pies).
You can add dry raisins, they will be soaked in juice. Depending on the apples, if they are not very sweet, add sugar.
Mix the dough. If the dough sticks to your hands, add a little flour. We stretch the dough as thin as possible from all sides. Stretch the dough and grease it with oil. Add cinnamon. Sprinkle cinnamon all over the dough. Sprinkle with sugar. We lay out the apples in rows, wrap them, and tape the edges. Lubricate the baking sheet with oil. Make holes in the top of the dough. Cover with a towel, leave in a warm place for 30 minutes to 1 hour to let the dough rise.
Bake in the oven for 30-40 minutes at a temperature of 180°C.

Sweet flatbreads with apples and blueberries
From 100 g of flour
300 g of highly carbonated water
1 tbsp. sugar, 1 tsp. salt
1 tsp vanilla sugar or 2-3 drops of vanilla essence.
We sift the flour so that it is saturated with air.
Knead the flour dough with mineral water. If the dough is thin, add flour, but not too much. The dough should flow well. At the end, add 2 tbsp. oil
Lubricate the pan with oil mostly only the first time, because the dough contains oil.
Fill prepared flatbreads with a filling of finely chopped apples and frozen blueberries.
From the juice left from apples and blueberries, we make a watering can for buttercups, adding starch to the juice to thicken it.
Pampukhy
Opara for pampukhs
75 ml of warm water
The yeast should stand in the heat for 30 minutes. The consistency of the yeast should be somewhat liquid
50 ml of low-fat milk
1 egg and 2 yolks
350-400 g of flour
spices ½ teaspoon, salt ½ teaspoon, black pepper ¼ teaspoon
1 tsp orange peel on vodka
1 tsp peels on vodka
You can take 50 ml of low-fat milk for dumplings
Despite the Christmas fast, it is allowed to take 1 egg and 2 yolks
The milk should be warm
In total, 350-400 g of flour will be needed. Flour should be added gradually, as much as necessary, so that the dough becomes a soft consistency, like for dumplings, not beaten
Add 15 g of sugar (10 g of sugar was already added to the dough), spices and salt. You can add vodka so that the oil does not accumulate in the dough during frying.
Pour out the egg and 2 yolks, add sugar, add spices ½ tsp, salt ½ tsp, orange peel on vodka, black pepper ¼ tsp. Pour the milk. Add steam. Add vodka 1 tsp.
Gradually add flour. We knead so that the dough becomes the consistency of thick sour cream. You can mix with a food processor at the lowest speed. The spoon should stand in the dough. Leave the sticky dough for 8-15 minutes. Cover the dough with a towel.

The dough should be worked with hands. Place the formed dumplings on a board.
The place in which the fastened pampukh is laid out on the pan at the bottom.
Pampukhs should be warmed up a bit in the oven or microwave before serving. Put in a bowl. sprinkle with powdered sugar.
Fry the dumplings in hot oil. Do not lower the temperature of the pan sharply, so the dumplings will absorb more oil inside.
