A simple Raffaello braid

A simple Raffaello braid – it fits perfectly for a family tea party, and will be a good decoration for a festive table. Plyatsok is easy and quick to prepare, because only one cake is baked and one cream is prepared. But despite the simplicity of making the braids, it turns out to be tender and simply melts in your mouth.

Simple Raffaello braid – ingredients

  • For bіskvіtu:
  • Eggs – 5 pieces.
  • Sugar – ¾ cup.
  • Flour – ¾ cup.
  • Starch – ¼ cup.
  • For the cream:
  • Cream (from 30%) – 500 ml.
  • Mascarpone – 250
  • Powdered sugar – 4 tbsp.
  • Coconut shavings – 200 g.
  • White chocolate – 1 bar.
  • Additionally:
  • Coconut shavings – 100 g.
  • Currant jam – 4-5 tbsp.
  • Grease for greasing the mold.
  • Crackers for sprinkling the mold.

Simple Raffaello braid – preparation

Sponge cake

Separate the whites from the yolks, beat to a stable foam. Add sugar 1-2 spoons at a time, beating well after each addition. Switch the mixer to the lowest speed, add yolks one by one.

Mix flour with starch and sift to an egg mass. Carefully knead with a spatula.

Grease the mold (21×21) with oil and sprinkle with breadcrumbs, pour the dough over it, level it. Bake for 30-40 minutes at a temperature of 180 degrees. Cool and cut into 3 cakes.

Cream

Break white chocolate into pieces and melt in a water bath. Leave to cool a little.

Beat the well-chilled cream with powdered sugar until thick, add mascarpone, melted chocolate and coconut, beat well.

We collect the braid

Grease the bottom biscuit with currant jam, spread a third of the cream, cover with the second biscuit, grease with cream, cover with the third cake. Grease the top and sides with the rest of the cream, sprinkle with coconut shavings.

Put the finished dough in the refrigerator for 2-3 hours.
