A simple recipe for Lecho, preservation for the winter – ingredients

  • Tomatoes – 3 kg.
  • Bulgarian pepper – 4 kg.
  • Garlic – 2 heads.
  • Salt – 2 tbsp.
  • Sugar – 130 g.
  • Oil – 150 ml.
  • Vinegar essence (70%) – 1 tablespoon (or vinegar (9%) – 8 tablespoons).

We weigh all products with stalks and seeds.

Cut the “core” out of the tomatoes, grind them in a meat grinder.

We clean the garlic and also grind it in a meat grinder.

We clean the pepper from the stalks and seeds, cut it in half, each half into 4-5 more parts. It is best to choose thick-walled peppers for lecho.

Pour the tomatoes into a pot (9-10 l), put on medium heat, let it boil, boil for 20 minutes, stirring occasionally and skimming off the foam.

After 20 minutes of boiling, add salt, oil, sugar, and let it boil for another 5 minutes while stirring.

Add pepper to the boiling tomato mass. 10 minutes after adding the pepper, carefully mix it with a large spoon, wait 5 minutes and mix again, another 5 minutes and mix again. During this time, the pepper should be completely immersed in the tomato mass.

As soon as the pepper has settled to the juice level, add a tablespoon of vinegar essence.

Cook for another 15 minutes, stirring occasionally, over medium heat. Add minced garlic, boil for another 5-10 minutes.

We spread the lecho in sterile jars, put on the crowns, and tightly close with a lid.

Turn the cans upside down, leave to cool.

According to this recipe, about 5 liter jars of ready-made lecho are obtained.
