Adjika from plums

Adjika from plums – very unusual, tasty, interesting in taste, aromatic. A great way to preserve plums for the winter.

Adjika with plum ingredients

  • plum – 2 kg.
  • garlic – 200 g.
  • Bulgarian pepper (red) – 1 kg.
  • hot pepper – 2-3 pcs.
  • dill – a large bunch.
  • green parsley – a large bunch.
  • green and purple basil – a large bunch.
  • tarragon (tarragon) – bunch.
  • tomato paste – 2 tablespoons.
  • salt – 2-2,5 tablespoons.
  • sugar – 70-100 g.
  • ground black pepper – 1/4 tsp.
  • ground coriander – 1/2 tsp.
  • ground cloves – 1/2 tsp.
  • ground cumin – 1/2 tsp.

The method of preparing adjika from plums

Wash the plum, remove the stones. Wash the two types of pepper and remove the seeds, cut into four parts. Wash the greens, dry them. Cut off leaves and young twigs from tarragon.

Pass the garlic through a meat grinder. In a separate bowl, pass through a meat grinder plum, sweet and hot pepper, all greens. Put the resulting puree in a metal pan with a thick bottom. Add salt and sugar to taste, ground spices, mix well and put on medium heat. Bring the mixture to a boil, reduce the heat to a minimum and cook for 15-20 minutes. Then add garlic and boil for another 5 minutes.

Pour adjika into dry, sterilized jars and roll up with sterilized lids. Turn the cans upside down, wrap until completely cool. Store adjika in a dark, cool, dry place.
