Alpine Square

Alpine Square – suitable for all lovers of sweet pastries. Tender moist sponge cake with sour plum jam, boiled condensed milk with pieces of delicate, airy meringue, whipped cream sprinkled with chocolate shavings. In short, enough talk, let’s start cooking!

Pliatsok Alpine – ingredients

  • For bіskvіtu:
  • Eggs – 4 pieces.
  • Sugar – 100 g.
  • Flour – 90 g.
  • Cocoa – 35 g.
  • For impregnation:
  • Black tea (brewed) – 1/3 cup.
  • Sugar – 1 tsp.
  • For the cream:
  • Oil – 250
  • Boiled condensed milk – 1 can (it is better to cook it at home).
  • Egg liqueur – 4 tbsp.
  • Ready-made meringue (dry in the middle) – 250 g.
  • For the cream:
  • Cream – 800 ml.
  • Powdered sugar – 2 tbsp.
  • Gelatin – 1 tbsp.
  • Additionally:
  • Plum jam – 170 g.
  • Lemon juice – 3 tbsp.
  • Dark chocolate – 70 g.

Pliatsok Alpine – preparation

Sponge cake

All the ingredients for the biscuit should be at room temperature.

Separate the whites from the yolks, beat until stiff foam, add sugar one spoon at a time. Beat well after each portion of sugar. Add the egg yolks one by one, beat at the lowest speed of the mixer.

Mix flour with cocoa, sift to an egg mass. Mix gently with a wooden spatula.

Cover the bottom of the mold (25×35) with parchment, spread the dough, level it. Bake in an oven heated to 180 degrees for 20-25 minutes, until a “dry match”. Remove the cake from the oven, cool.

Soak the cake with tea and sugar. Mix plum jam with lemon juice, grease the cake.

Cream

Beat the butter to a fluffy white mass (6-8 minutes), while beating, add the egg liqueur. Add boiled condensed milk one spoon at a time, beat well. Add chopped meringue to the cream, spread the cream on a cake greased with jam.

We dilute gelatin in 50 ml of hot water, leave to cool.

Beat the well-cooled cream to a thick cream, at the end of the beating, add powdered sugar, beat a little more.

Add 2-3 spoons of whipped cream to the gelatin, mix well and pour into the rest of the cream, whip well. Immediately transfer the cream to the cream with pieces of meringue, level it.

Sprinkle grated chocolate on top. Put in the refrigerator for 6-8 hours.
