Apple-coconut-nut cake

A simple and tasty pie without cream – apple-coconut-nut pie. The pie is moderately sweet, slightly moist and tender. The entire plot is baked in one cake. Try it!

Apple-coconut-nut cake – ingredients

  • For the dough:
  • Flour – 300 g.
  • Oil – 200
  • Powdered sugar – ½ cup.
  • Yolks – 4 pieces.
  • Sour cream – 2 tbsp.
  • Baking powder – 1 tsp.
  • For apple mass:
  • Apples – 1 kg.
  • Jelly (any flavor) – 1 package.
  • Water – ¼ cup.
  • Sugar – ½ cup.
  • For coconut mass:
  • Squirrels – 4 pieces.
  • Sugar – 150 g.
  • Starch – 1 tbsp.
  • Coconut shavings – 150 g.
  • Vinegar – 1 tbsp.
  • For the nut mass:
  • Walnuts, finely chopped – 150 g.
  • Sugar – 1 cup.
  • Eggs – 4 pieces.
  • Breadcrumbs – 2 tbsp.
  • Cocoa – 1 tablespoon
  • Flour – 1 tbsp.

Mix flour with baking powder and powdered sugar, add cubed butter. Cut with a knife until a small oily crumb is formed. Add yolks and sour cream to the crumbs, knead the dough.

We divide the dough into 2 equal parts, wrap it in cling film, put it in the refrigerator for 40-60 minutes.

Apple mass

Peel the apples, rub on a coarse grater, add water and sugar, fry over low heat until the liquid evaporates completely.

Add jelly (powder) to hot apples, mix well, leave to cool.

We take the dough out of the refrigerator, roll it out according to the size of the form (25×35), taking into account the small sides. We cover the form with parchment, transfer the dough, form small sides. Spread the cooled apple mass.

Coconut mass

Beat the egg whites to a stable foam, add sugar one spoon at a time, beat well each time at the highest speed of the mixer. Add vinegar, beat.

Coconut is mixed with starch, added to the protein mass, carefully mixed with a wooden spoon. Spread the mass on top of the apples, level.

Nut mass

Beat the eggs with sugar to a fluffy light mass.

Mix nuts, breadcrumbs, cocoa and flour, add to the egg mass, carefully mix with a spoon. We transfer the mass on top of the coconut, carefully level it.

Take the second part of the dough out of the refrigerator, roll it out, cover with the nut mass.

Bake at 180 degrees for 60-70 minutes. Before serving, sprinkle with powdered sugar.
