Let’s start cooking apple roll. Apples need to be cleaned and seeds removed. Grate the apples on a coarse grater (if they are very juicy, drain the juice). Sprinkle the apples with lemon juice, sprinkle with cinnamon and mix.

Now we will prepare the dough for apple roll. Beat the whites, gradually adding 2 tablespoons of sugar and a pinch of salt. Beat the yolks with the remaining sugar and vanilla. While whisking, gradually pour in the oil. Gently mix the yolk mixture into the egg whites and gradually add the flour so that no lumps form.

We start baking the base for apple roll. Line a baking sheet with parchment. Spread apples and steamed raisins evenly over the entire surface. Now carefully spread the prepared dough on top of the apple filling. Bake in an oven heated to 180 degrees for 20-25 minutes until golden.

Cover the baked layer with a kitchen towel, quickly turn it over and remove the parchment. Carefully roll the still hot layer into a roll, helping yourself with a towel.

It’s ready apple roll. Wait until it cools and serve, sprinkled with powdered sugar.
