  • Beans (weight of dry beans) – 500 g.
  • Bulgarian pepper – 800 g.
  • Carrot – 500 g.
  • Onion – 500 g.
  • Tomato paste – 250 g.
  • Water – 750 ml.
  • Oil – 150 ml.
  • Sugar – 2 tbsp.
  • Salt – 1 tbsp.
  • Pepper, allspice – as desired and to taste.

Soak the beans in cold water overnight. In the morning, drain the water, fill with fresh water, and cook for 30 minutes.

Peel the carrots, grate them on a beet grater. Put in a pan, pour beans on top.

We clean the onion, cut it into quarter rings.

Wash the pepper thoroughly, remove the seeds, and cut into strips.

Pour the pepper and onion into the pan.

Mix water with tomato paste (you can replace 1 liter of ready-made tomato juice). Pour the resulting juice over the vegetables. Put on fire, bring to a boil. Add sugar, salt, oil, cook for 40 minutes. Add spices as desired.

Place the hot salad in prepared sterilized jars, immediately cover with sterilized lids. We leave the cans to cool, put them in a cold place.

If the bean and bell pepper salad will be stored in a warm apartment for the winter, it should be sterilized before sealing.

We cover the bottom of a large saucepan with a clean cloth, put the jars covered with lids. Fill the “shoulders of the can” with hot water.

Sterilize the cans (0,5 l) 15 minutes after boiling and only then cover hermetically with lids.
