Bird’s milk cake recipe

Level the top with a knife and bake in an oven preheated to 180 ° C until golden (7-10 minutes). The biscuit is ready when the toothpick comes out dry. Cool the finished biscuit and cut horizontally into 2 halves.
  3. For the cream, separate the whites from the yolks. Dilute starch in 1 tbsp. water In a bowl, grind the yolks with 1 cup of sugar and vanilla sugar, pour milk, add starch, beat until smooth. Place the bowl in a water bath and cook until thickened. Cool, add softened butter and beat with a mixer.
  4. Add gelatin to 150 ml of water for 20 minutes, heat in a water bath or on low heat, stirring until completely dissolved, strain. Beat the whites with 1 cup of sugar. Quickly pour gelatin into the whipped whites in a thin stream, stirring constantly. Add the prepared cream and mix thoroughly.
  5. Put one half of the sponge cake in a deep form, pour cream, cover with the second cake and leave to harden for 4-5 hours in the refrigerator.
  6. For the glaze, melt the chocolate with butter in a water bath or in a microwave oven, remove the frozen cake from the mold and cover it with glaze on top and sides. Put in the refrigerator for 1 hour and serve.
