Biscuit with cream and apples – easy to prepare and by the composition of the braids. An ordinary sponge cake combined with apples and simple custard turns into an interesting and tasty addition to a family (or even holiday) tea party. The braid is moderately moist, easy to cut, beautiful in cut + simple to make. Minimum time, maximum taste.

Biscuit with cream and apples – ingredients

  • For bіskvіtu:
  • Eggs – 6 pieces (large).
  • Sugar – ¾ cup.
  • Flour – ¾ cup.
  • Cocoa – 3 tablespoon
    For the apple layer:
  • Apples – 1,5 kg.
  • Sugar – ½ cup.
  • Jelly lemon – 1 pack.
  • For seepage:
  • Strong, sweet tea with lemon – 2 glasses.
  • Vodka – 70 ml (optional).
  • For the cream:
  • Milk – 750 ml.
  • Vanilla sugar – 1 tbsp.
  • Sugar – ½ cup.
  • Flour – 1 tbsp.
  • Starch – 4 tbsp.
  • Yolks – 2 pieces.
  • Oil – 100
  • For the icing:
  • Oil – 50
  • Sugar – 2 tbsp.
  • Cocoa – 2 tablespoon
  • Milk – 1 tbsp.
  • Dark chocolate – 3 “windows”.

Biscuit with cream and apples – preparation

Sponge cake

Separate the whites from the yolks, beat until stiff foam. Add sugar one spoon at a time, beating well each time. Add yolks one by one, beat at the lowest speed of the mixer.

Mix flour with cocoa, sift to egg mass, carefully mix with a wooden spoon.

We cover the form (23×32) with parchment, spread the dough, level it, bake the biscuit at a temperature of 180 degrees for about 35 minutes, until a “dry match. Cool, cut into two thin cakes.

Cream

Add flour, starch and egg yolks to a glass of milk, mix well so that there are no lumps.

Put the rest of the milk on the fire, add sugar and vanilla sugar, bring to a boil. Pour the previously prepared mixture into the boiling milk. Cook, stirring constantly, until thickened.

Transfer the cooked cream to a ceramic dish, cover with cling film so that it touches the entire surface of the cream. Leave to cool.

Beat the butter until smooth, add a spoonful of cooled custard, beat until smooth.

Apple mass

Peel the apples, cut them into cubes, cover them with sugar, fry them briefly in a pan (apples are fried, juice is released, but not yet soft, not boiled). Remove from heat, add jelly, mix well. Leave to cool.

We collect the braid

We put the lower part of the biscuit in a baking dish, soak it well with half of the liquid for soaking, spread the apple mass on top, level it, spread the cream, level it. Cover with the second cake, press lightly, soak.

Glaze

Put all the ingredients in a saucepan, stir and heat until smooth. We cover the top of the braid.
