Brazilian chicken salad
A bright salad from Latin American cuisine has a universal recipe. On the one hand, Brazilian dishes are still exotic for Ukraine. On the other hand, all the ingredients for Salpicão de Frango (the original name of the dish) can be easily found in any supermarket. So try this recipe and cook Brazilian chicken salad for guests, relatives or for yourself.

chicken breasts (boneless and skinless fillets) – 700 g.

Season the chicken breasts with salt and pepper and set aside while you prepare the rest of the ingredients.
Grate the carrots on a grater, as for carrots in the Korean way. Garlic – grind or squeeze; onion – cut into cubes; green onions – chopped (you can also supplement the recipe with parsley).
In some more authentic recipes, it is suggested to use ready-made Brazilian sofrito sauce instead of garlic and onion. But it is unlikely to be found in Ukraine – so we will use a simpler option.
Heat a quarter of a cup of oil (olive is best) in a deep frying pan. When it becomes hot, pour garlic into it. Fry for up to 2 minutes, then lay out the chicken fillet.
Fry the meat on both sides until golden – about a minute on each side.
Pour in the broth, cover the pan with a lid and cook for about 25 minutes over low heat. After that, turn off the heat, and use a wooden spoon to tear the meat into small, irregularly shaped pieces.
After 1-2 minutes, drain the broth (you can save it for cooking other dishes) and give the chicken time to cool to room temperature.
While the meat is cooling, mix carrots, corn, greens and raisins in a large bowl.
In a smaller salad bowl, mix mayonnaise, vinegar, mustard and a teaspoon of oil with a whisk.
Add the chicken to the vegetables and pour the sauce on top.
You can decorate the salad with chips or crackers before serving.
By the way, you can improve the dish by adding a fresh apple or celery root to it. Both of these ingredients are also present in various regional variations of Brazilian salad.
