Brine with pearl barley, preservation for the winter

A simple recipe for home preservation – pickle with pearl barley. Such preparation is a great taste and saves time for preparing pickles in the winter. It tastes good as an independent dish (as a salad).

To prepare the first dish with such a semi-finished product, you need to prepare a broth, add potatoes to it. When the potatoes are ready, add the contents of the jar, cook for 10 minutes.

Brine with pearl barley, preservation for the winter – ingredients

  • Cucumbers – 1 kg.
  • Tomatoes – 750 g.
  • Carrot – 450 g.
  • Onion – 450 g.
  • Perlovka – 250 g.
  • Water – 250 ml.
  • Oil – 60 ml.
  • Vinegar (9%) – 60 ml.
  • Sugar – 2 tbsp.
  • Salt – 1 tbsp.

WARNING. The weight of already prepared vegetables is indicated in the recipe.

Wash pearl barley in cold water 2-3 times. Cover with water, leave to swell (while we do the vegetables).

Cut the cucumbers into cubes.

Pour the tomatoes with boiling water and peel them. Beat in a blender (ground in a meat grinder).

Clean the onion, cut into small cubes.

Peel the carrots, grate them on a coarse grater.

Put all the vegetables in a pan. Strain the pearl barley, add to the vegetables. Add salt, sugar, oil and water. We mix everything.

We put the pan on medium heat, bring to a boil, reduce the heat to a minimum, cover with a lid, cook for 30-40 minutes. During this time, mix 3-4 times. At the end of cooking, add vinegar, mix well again.

Pour the boiling mixture into sterilized jars, screw on sterilized lids.

Turn the jars upside down, cover with a warm blanket, leave to cool.

From the given amount of ingredients, 6 jars of 0,5 l of the finished product are obtained.
