Buckwheat soup with beef – a real find for a novice cook. It does not require any extraordinary abilities or exotic ingredients. And as a result, you will get a light, aromatic soup that will appeal to both children and adults. Even if someone does not like first courses, he will definitely want supplements.

Buckwheat soup with beef – ingredients (for 6 servings)

  • beef – 600 g.
  • buckwheat groats – 1/2 cup.
  • potatoes – 1–2 pcs.
  • carrots – 1 pcs.
  • onion – 1 pcs.
  • parsley root – 1 pc.
  • oil – 1 tbsp.
  • salt – to taste.

Put thoroughly washed meat in a large pot with water. As soon as the water boils, remove the foam with a skimmer, reduce the heat to a minimum and cover the future broth with a lid.

Cook the meat over low heat (this is important – this way the broth will be transparent) for 60 to 90 minutes, depending on the size of the piece.

Sort through buckwheat. Rinse it with cold water until the water runs clear.

Heat the pan with oil. Pour the onion, cut into small cubes. Sauté the onion until transparent.

Cut carrots into strips. When the onion has softened, pour the carrots into the pan. And we continue to cook the vegetable mixture for 10–15 minutes, stirring constantly. Then remove the pan from the stove.

When the broth is ready, remove the meat from it. We wait for it to cool down and divide it into portions, after which we return the beef to the pan.

Clean the parsley root, cut it into thin strips and add it to the broth.

Buckwheat is also poured into the pan. We wait until the broth boils and reduce the heat to a minimum.

Immediately after that, throw diced potatoes into the broth and cook for 10–15 minutes.

Finally, add sauteed onions and carrots, salt. Cook for another 1-2 minutes. The soup is ready.

Pour on plates. If desired, you can sprinkle with chopped fresh herbs before serving. Bon appetit!
