Cake with apricots on kefir
Smakota (Smakotainfo.com) suggests kicking off the apricot season with a delicious yet delicious Apricot Pie. Cake with apricots on kefir – this is a tender dough, aromatic filling and a crispy crust.

Ingredients:
- Apricots – 450 g.
- Flour – 320 g.
- Kefir – 200 ml.
- Eggs – 3 pieces.
- Oil – 80 ml.
- Sugar – 200 g.
- Vanilla extract – 1 tsp. (you can add packets to regular vanilla sugar).
- Baking powder – 2 tsp.
- Sugar – to taste.

Apricot cake recipe on kefir
First, let’s start with apricots: wash, pour boiling water for 1-2 minutes, take out, dry on a paper towel, remove the stone, remove the skin (the stage of pouring boiling water and removing the skin can be skipped). Cut half of the apricots into cubes. Slice the other half.
Now let’s prepare the dough. Beat the eggs with sugar to a thick mass, add kefir, oil, vanilla, mix well. Sieve the flour through a sieve, add it to the liquid mixture, add baking powder and mix until smooth. Add apricot cubes.
Lubricate the form with oil, sprinkle with flour. Pour out the dough, level the surface. Arrange the apricot slices on top. Sprinkle sugar on top and put in an oven heated to 200 degrees for 45-50 minutes (orient yourself on your oven).
When the finished cake is ready, take it out of the mold and cut it into portioned pieces.
