Cake with currants

Cake with currants delicate, light and simply fantastic, the combination of sweet shortcrust pastry with delicate souffle is amazingly delicious. And the color of such a pie turns out to be soft pink. We are preparing a cake with red currants together with Smakota (Smakotainfo.com). Such a cake is prepared quickly and easily, even novice housewives can handle it.

Currant pie recipe

  • Flour – 200 g.
  • Red currant – 300 g.
  • Oil – 125
  • Sugar – 200 g.
  • Eggs – 2 pieces.
  • Starch – 2 tsp.
  • Baking powder – 1 tsp.

First, separate the whites from the yolks, the yolks will go into the dough, put the whites in the refrigerator, they will go into the souffle.

Mix flour, 100 g of sugar and baking powder. Add chopped butter. Grind the flour mixture with butter to crumbs, add yolks. Knead the dough with a knife or fork. We form a ball from it, cover it with cling film and put it in the refrigerator for 30 minutes.

Now let’s deal with currants. Wash, separate from the stalks, grind (pass through a meat grinder, blender, if you have a juicer, you can use it, then you won’t need to mash the currants). Grind through a sieve and get berry puree.

Take the dough out of the refrigerator, roll it out a little on a floured surface and put it in a mold (20 cm), flatten it with your hands, make sides (do not make them high and thin, because they will burn quickly. Put the mold with the dough in the oven, heated to 190 degrees, for 15-20 minutes.

While the dough is in the oven, we make the filling. Beat the whites with a small pinch of salt so that after turning the pan with them, the whites hold firmly. Then add the remaining sugar and starch, beat for 5 minutes. Combine the whipped proteins and berry puree. Mix well, getting a beautiful pink color.

Remove the finished cake from the oven. And we pour this mixture on our cake, return the form with the cake to the oven for another 15-20 minutes.
