Calzone pizza
Today, you and I will prepare another version of Italian pizza – calzone, which looks very similar to a large Ukrainian dumpling Calzone, just as traditional pizza is made with different toppings and different sizes. You can make one large pie and serve it cut into portioned pieces, or you can make small calzones (one-portion).
You can use any other minced meat or ready-made cooked meat in the pizza, just like for a regular pizza.
Calzone – ingredients
- For the dough:
- Milk – 0,75 glasses.
- Flour – 2 cups.
- Dry yeast – 1 tbsp.
- Salt.
- Sugar – 1 tbsp.
- Egg (yolk) – 1 piece (you can do without it).
- Olive oil – 3 tbsp.
- For the filling:
- Minced pork and beef – 400 g.
- Mozzarella – 125 g.
- Small onion – 1 piece.
- Oil – 2 tbsp.
- Garlic – 1 clove.
- Basil leaves – 5-6 pcs.
- Tomatoes in their own juice – 400 g.

Calzone – preparation
Warm the milk slightly. Dissolve yeast and sugar in it, let it stand for 20 minutes until the mixture foams. Sift flour and salt into a bowl, add olive oil and milk with yeast, knead the dough. Cover with a towel and put in a warm place for 1,5-2 hours.
Peel the onion and garlic, finely chop and fry in a heated pan with oil for 3-5 minutes. Add minced meat, stir, kneading lumps with a spatula, stew for 10 minutes. Add chopped tomatoes and simmer for another 5-7 minutes.
Cut the mozzarella into pieces, tear the basil leaves with your hands.
On a floured table, roll out the dough into a large pancake up to 0,5 cm thick. Put the filling on the other side of the pancake, mozzarella on top, sprinkle with basil and dry herbs. Cover the filling with the second half of the dough and pinch the edges.
Transfer the calzone to a greased baking dish and brush with egg yolk. Bake in an oven heated to 200 degrees for 10-15 minutes until golden brown.
