  • grated carrot – 180 g.
  • whole wheat flour – 150 g.

  • walnuts – 100 g.
  • sugar – 200 g.
  • butter – 1 tbsp.
  • salt – 1 pinch.
  • ground ginger – ½ tsp.
  • ground cinnamon – 1 tsp.
  • baking powder – 1 tsp.
  • For the sauce
  • sour cream 15% – 50 g.
  • powdered sugar – 70 g.

Preparation of carrot cake with sauce:

We heat the oven to 190 ° C. We take a form for baking cupcakes (silicone is possible).

Preparation of sauce. Beat the cheese with half of the powdered sugar for two minutes. Add sour cream, beat for another minute. Add the rest of the powdered sugar. We continue to beat so that a mixture similar to condensed milk is formed. Set the sauce aside.

Remove the peel from the orange and squeeze out the juice.

Chop the walnuts a little and fry them in a dry frying pan for up to 10 minutes over low heat. Remove from heat and add salt and 1 tablespoon of butter. Mix well. Nuts should be slightly covered with caramel. Set the nuts aside to cool.

Mix orange juice, oil and 2 beaten eggs in a container. Add sugar. Beat everything thoroughly (you can use a mixer) to a homogeneous mixture.

Grate the carrots on a fine grater (the finer the better).

In another container, mix flour, baking powder, cinnamon, ginger and grated orange peel. Mix everything well.

We combine the dry mixture with the liquid. Mix everything well. Add grated carrots and walnuts. Mix everything well.

We fill the form 2/3. Put in the oven and bake for 40 minutes until done. We check readiness with a wooden stick.

Leave the cake in the oven until it cools down.

Pour the sauce over the finished carrot cake.
