Cheese tart with apricots – very easy to prepare. Smakota (Smakotainfo.com) recommends even novice cooks. This dish has a double benefit! After all, the cheese tart with apricots uses cheese and fragrant, golden and very vitamin apricots. If necessary, apricots can be replaced with peaches, the result will still be unsurpassed!

A recipe for making a cheese tart with apricots

  • For the dough
  • Flour – 200 g.
  • Oil – 90
  • Salt – 5 g.
  • Egg – 1 piece.
  • Water – 20 g.
  • For filling
  • Chicken egg – 3 pieces.
  • Low-fat cheese – 500 g.
  • Starch – 1 tablespoon.
  • Semolina – 3 tablespoons.
  • Sugar – 2 tablespoons.
  • Apricots – 300 g.
  • Ground cinnamon to taste.
  • Powdered sugar to taste.
  • Butter – 5 g.
  • A pinch of salt.

  1. Mix flour, butter and salt with your hands until it becomes a fine crumb. When the mixture becomes homogeneous, add the egg and water, quickly knead the elastic dough.
  2. We spread the dough on a sheet of food film, cover it with another sheet of film and roll it out to a thickness of 0,3 cm (we do this in order to preserve its structure without adding flour).
  3. We send the dough to the refrigerator for 30-60 minutes, it should cool down well and keep its shape.
  4. We take the dough out of the refrigerator, cover the bottom with parchment and carefully transfer our dough to the form, forming the sides and bottom with our hands. Prick the surface well with a fork, cover the dough with parchment and fill it with weight (beans, salt, flour that is at hand).
  5. We put the dough in the oven heated to 170 degrees for 15 minutes. And we start preparing the filling.
  6. Separate the yolks from the proteins.
  7. Mix cheese, semolina, starch, sugar and yolks.
  8. Beat the egg whites with a pinch of salt until light foam.
  9. Mix the curd mass and proteins carefully.
  10. We remove the pits from the apricots, we got 2 halves.
  11. Remove the cake from the oven, let it cool a little. Pour the cheese mass on top of the cake, spread the prepared apricots on top.
  12. Bake at 180 degrees for about 25-30 minutes. After you take the tart out of the oven, sprinkle it with powdered sugar and ground cinnamon.
