Cheesecake from mother-in-law

They say that for a man, if he does not love his wife and how she cooks, the dishes prepared by his mother are the tastiest. That’s why we share with you a recipe for delicious cheesecake from my mother-in-law, and even the husband will not guess whose hands made such a delicacy, because everything will turn out perfectly!)

Cheesecake from mother-in-law – ingredients

  • For the dough:
  • Oil – 75
  • Margarine – 75
  • Flour – 250 g.
  • Baking powder – 1/2 pack.
  • Sugar – 1/3 cup.
  • Dark cocoa – 3 tbsp.
  • Egg – 1 pcs.
  • Sour cream – 2 tbsp.
  • For the cheese part:
  • Cheese – 900-1000 g.
  • Sugar – 1 cup.
  • Eggs – 6 pcs.
  • Oil – 125
  • Semolina – 2 tbsp.
  • Starch – 1-2 tbsp.

Cheesecake from the mother-in-law – recipe

First we prepare the dough. To do this, you need to melt butter and margarine in a steam bath, cool.

Next, mix the rest of the ingredients and add the cooled butter. We knead the dough with our hands or with a mixer with a special attachment.

We make 10 balls and put them in the freezer. Why do this, you ask? Harder dough is easier to grate. And why exactly 10 pieces – because you need small pieces, because, firstly, the dough of small balls freezes faster, and secondly, the dough starts to melt quickly from warm hands, and when the balls are small, it does not have time to melt and the dough is grated will look good in baked goods.

Next, we prepare the cheese filling. To do this, we blend the cheese or for greater splendor, if you have time and desire, you can pound the cheese with a potato masher +- 20 min.

The butter is also melted in a steam bath and cooled. Separate eggs into yolk and white.

We combine all the ingredients, except proteins and sugar. Mix well.

Separately, beat the egg whites with sugar to a lush white mass that does not fall. The better the whites are beaten, the better the cheesecake will grow.

We take the dough out of the freezer and grind half (5 balls) on a large grater immediately into a 20*30 form.

Next, carefully mix the whites with the cheese mixture with a wooden or silicone spatula (do not mix with metal utensils, because whites fall quickly on metal, and your cheesecake may not “grow”) and spread on top of the grated dough.

Finally, quickly rub the rest of the chocolate dough and put it in the oven for 1 hour at a temperature of 180 degrees.

When the cheesecake is already browned and baked, turn off the oven and leave it there until it cools.
