Cheesecake with caramel and peanuts – delicious, tender cheesecake without baking. The cooking process, however, requires time and effort. But believe me, it is worth it!

Cheesecake with caramel and peanuts, without baking – ingredients

  • For the base:
  • Oil – 250
  • Chocolate cookies – 370 g.
  • For the caramel mass:
  • Sugar – 300 g.
  • Cream (from 30%) – 400 ml.
  • Oil – 120
  • Salt – 6 g.
  • Salted peanuts – 80 g.
  • For the cheese mass:
  • Cheese (thrice ground) – 400 g.
  • White chocolate – 100 g.
  • Powdered sugar – ½ cup.
  • Cream (from 30%) – 2/3 cup.
  • Gelatin – 4 tsp.
  • Water – 4-5 tbsp.
  • Additionally:
  • Milk chocolate.

Grind the cookies in a blender, add melted butter, mix well, put in a mold (d=22 cm), cover the bottom, form the sides. We send it to the freezer for 30 minutes.


In a saucepan with a thick bottom (necessarily!) pour sugar, put it on medium heat, leave it to melt, at the end of melting you can stir it a little.

While the sugar is melting, heat the cream, bring to a boil, but do not boil.

When the sugar has completely melted, carefully pour in the hot cream. The caramel will begin to foam and fizz – this is normal. While pouring the cream, constantly stir with a spatula.

When the caramel has become homogeneous, without lumps, remove it from the heat, add oil, mix well.

Set the caramel aside for 15-20 minutes, add the peanuts, and pour it onto a well-chilled base. Leave in the refrigerator for 1 hour.

Curd mass

Dissolve gelatin in hot water, leave to cool.

Dissolve white chocolate in a water bath. Leave to cool a little.

Beat the well-chilled cream with powdered sugar to a lush, thick cream. 1-2 tbsp. add cheese and white chocolate, beat until smooth.

To the gelatin, add 1-2 tbsp. of cheese mass, mix well, pour into the total mass, beat well. Immediately put it on the caramel. We put it in the refrigerator for the whole night.

Melt the milk chocolate in a water bath, draw blobs-patterns on the cheesecake.

Cut the cheese curd by dipping the knife in hot water.
