Cheesecake with nuts and sunflower seeds

A delicate cheesecake on a pillow of shortcrust pastry, covered with a fluffy walnut blanket and covered with caramelized sunflower seeds – this is our Cheesecake with nuts and sunflower seeds. Such cottage cheese simply melts in your mouth, and you want to try it again and again.

Cheesecake with nuts and sunflower seeds – ingredients

  • For the dough:
  • Flour – 300 g.
  • Powdered sugar – 100 g.
  • Oil – 100
  • Lard – 1 tbsp.
  • Egg – 1 piece.
  • Yolks – 2 pieces.
  • Baking powder – 2 tsp.
  • For the cheese mass:
  • Cheese – 1400 g.
  • Sugar – 300 g.
  • Sour cream – 250 ml.
  • Oil – 125 ml.
  • Yolks – 4 pieces.
  • Eggs – 2 pieces.
  • Milk – 250 ml.
  • Vanilla pudding – 2 packages.
  • Starch – 1 tbsp.
  • For the nut cake:
  • Squirrels – 6 pieces.
  • Sugar – 5 tbsp.
  • Ground nuts – 100 g.
  • Chopped nuts – 100 g.
  • Manka – 1 tbsp.
  • Flour – 1 tbsp.
  • Salt – a pinch.
  • For the cream:
  • Boiled condensed milk – 1 can.
  • Oil – 200
  • Additionally:
  • Sunflower seeds – 200 g.
  • Oil – 2 tablespoons
  • Sugar – 2 tbsp.

Dough

Mix flour with baking powder. Add solid butter and chop it into fine crumbs with a knife. Add lard, egg and yolk to the butter crumbs, knead the dough. We wrap the dough in cling film, send it to the refrigerator for 30-40 minutes.

Cover the form with parchment (24×40), roll out the dough, flatten it in the form (the dough can be rolled out immediately on the parchment). Bake at a temperature of 180 degrees for about 20 minutes.

Curd mass

Grind the cheese in a meat grinder 2-3 times.

Eggs and yolks are beaten with sugar until a white loose mass is formed. In several stages, add cheese to the eggs, mix to a homogeneous mass.

Add puddings and starch to milk, mix well so that there are no lumps. Add oil, sour cream and milk with puddings to the curd mass. We mix at the lowest speed of the mixer until a homogeneous mass.

Pour the cheese mass on the toasted cake, bake at a temperature of 180 degrees for 40-50 minutes.

Sinful meringue

Towards the end of baking the cheesecake, we prepare the nut meringue.

Beat egg whites with salt until thick foam. Add sugar one spoon at a time, beat until a smooth, glossy mass is formed. Nuts are mixed with flour and semolina is carefully mixed into the protein mass.

Spread the nut meringue on the cheese layer, level it, and bake for another 30 minutes. After baking, leave the cheesecake in the oven (close the door) until it cools completely.

Cream

Beat soft butter to a soft creamy mass, add condensed milk in several stages, beat until smooth. Spread the cooled nut meringue on top.

Melt the butter and sugar in a hot pan, pour in the sunflower, stir and fry until golden brown.
