Cheesecake with peaches – recipe

Dough

Mix flour with baking powder, sugar and vanilla sugar. Add cold butter, cut into cubes, cut with a knife until the butter crumbles.

Add yolks to the crumbs, knead the dough. We divide the dough into 2 parts, wrap it in cling film, send one to the refrigerator for 30-40 minutes, the second to the freezer.

We take the dough out of the refrigerator, roll it out on parchment (according to the size of the form). Transfer to a mold (25×35), prick well with a fork.

Curd mass

Mix the pudding with the baking powder.

Beat butter with powdered sugar until smooth, add egg yolks, beat. Alternately add a spoonful of cheese and a spoonful of pudding until the ingredients run out.

Beat the egg whites to a stable foam, carefully mix them into the cheese mass.

We collect cheese curds

On top of the dough, we spread half of the cheese mass, peaches cut into pieces, the rest of the cheese mass. Take the dough out of the freezer, rub it on a coarse grater on top of the cheese.

Bake in the oven for about 90 minutes at 160 degrees. Leave in the form until completely cooled.

Before serving, sprinkle with powdered sugar.
