Cherry pie with caramel cream – tasty and interesting in the cut of the plates. The pie recipe combines cakes of different colors and flavors, cherry jelly (with cherries) and an interesting cream with a light caramel note.
Cherry pie with caramel cream – ingredients
- For the dough:
- Flour – 250 g.
- Oil – 300
- Powdered sugar – 1 cup.
- Eggs – 6 pieces.
- Vanilla sugar – 1 package.
- Baking powder – 1 tsp.
- Ammonia – 1 tsp.
- Cocoa – 1 tsp.
- Walnuts (ground) – ½ cup.
- For cherry mass:
- Cherries in syrup (pitted) – 1 jar (0,33).
- Cherry jelly – 2 packages.
- For the cream:
- Cream – 500 ml.
- Boiled condensed milk – 100 g.
- Dark chocolate – 50 g.
- Gelatin – 3 tsp.
- Water – ¼ cup.

Dough
Beat butter with powdered sugar and vanilla sugar. Add yolks one by one, beat (add each subsequent yolk only when the previous one is completely combined with the butter mass).
Mix flour with baking powder and ammonia, add to the butter mass, mix well.
Beat the egg whites to a stable foam, carefully mix them into the dough. Divide the dough into three equal parts. Add cocoa to one, nuts to the second, and leave the third unchanged.
One by one, we put the dough in a form (25×35), covered with parchment, bake each cake at a temperature of 180 degrees for about 20 minutes.
Strain the cherries from the liquid. Add water to the syrup to make 3 cups of liquid. We put the liquid on the fire, bring it to a boil. Remove from heat, add cherry jelly, mix well, leave to cool and slightly thicken. When the jelly begins to barely thicken, add cherry, mix.
We collect the braid
Thicken the cherry mass on the dark cake, cover it with a nut cake, press it down, put it in the refrigerator.
Cream
Pour 100 ml of cream and condensed milk into a saucepan, stir and heat until smooth. Add chocolate to the hot mass, stir until smooth. Set aside until completely cooled.
Dissolve gelatin in hot water, set aside.
Whip the well-chilled cream to a thick lush cream. In several stages, add the mass with condensed milk, pour in the gelatin in a thin stream, whisk constantly.
We spread the mass on a nut cake, level it, cover it with a light cake, send it to the refrigerator.
