Cherry pie with sour cream filling

Cook delicious cherry pie with sour cream filling together with Smakota (Smakotainfo.com). The delicate cherry sourness in this pie is very well combined with the moderately sweet dough and delicate sour cream filling.

A recipe for cherry pie with sour cream filling

  • Butter (room temperature) – 100 g.
  • Flour – 200 g.
  • Egg yolk (for dough) – 1 piece.
  • Powdered sugar (1/3 in the dough, 1/3 in the filling) – 2/3 cup.
  • Cherries (pitted) – 400 g.
  • Sour cream (for filling, fat content 20% or higher) – 250 g.
  • Chicken egg (in filling) – 2 pieces.
  • Potato starch (tablespoon without bitter) – 1 tablespoon.
  • Vanilla sugar (1 tsp each in the dough and in the filling) – 2 tsp.

Cream butter at room temperature with powdered sugar (1/3 cup) and 1 tsp. vanilla sugar, add yolk and mix well with a fork, then gradually add flour and knead the dough. Roll out the dough into a layer about 0,7 cm thick (it is more convenient to do this immediately on baking paper and covered with cling film).

Transfer the dough to a baking dish (24 cm), prick it with a fork and put it in the freezer for 10 minutes. Remove from the freezer and bake for 10-15 minutes at a temperature of 180 degrees until half-done.

Now let’s make the filling: mix eggs, sour cream, a third of a glass of powder, vanilla sugar, add starch, mix well. We take our dough out of the oven, spread the cherry on top, evenly distributing it over the entire surface of the pie, evenly distribute the filling and bake at a temperature of 180 degrees for 30-40 minutes. When the filling thickens completely, the cake is ready.

Cool the cake completely (in the form) and send it to the refrigerator (for at least an hour. After that, the filling will set completely and will not crumble when slicing.
