So, let’s get started. Thoroughly wash and dry the chicken breast fillets on a napkin. Rub with salt.

Let’s prepare, probably, the most important thing to prepare chicken breast pastrami – marinade. After all, it is he who will give piquancy and excellence to our dish. For the marinade, combine all the ingredients in a saucepan: wine, mustard seeds, bay leaf, garlic passed through a press, black peppercorns, honey, ground paprika and dried rosemary. Heat, stirring, until the honey dissolves. Heat until hot, but do not boil – this is very important!

Take the chicken fillet and put it in a deep glass container and pour the hot marinade over it. Cover and leave at room temperature until completely cool. Then put it in the refrigerator for a day.

The next day, take out the breasts from the marinade, put them one on top of the other and tighten them tightly with threads. Put the roll that came out in the form. Divide the marinade into 3 parts. Pour one part of the marinade over the roll.

To prepare pastrami from chicken breast, you need to heat the oven to 220 degrees. Put the mold in the oven for 5 minutes. Then remove and turn the roll over, pour over the second part of the marinade. Put it back in the oven for another 5 minutes. Take it out again, turn it over and pour over the third part of the marinade. Return to the oven for another 5 minutes, reducing the temperature to 180 degrees. Turn off the oven and leave it in it pastrami until completely cooled, you can overnight. Do not open the oven in any case until it has completely cooled down! Wrap the finished pastrami in paper or foil and put it in the refrigerator before serving. Only before serving, remove the threads with which you tied the meat.

Serve thinly sliced ​​with fresh vegetables or simply with cherry tomatoes. The meat is well salted, juicy, tender.
