Chocolate-coffee cake – recipe

Add a tablespoon of cocoa to the flour and mix. Pour all the eggs into a metal container, add sugar. Mix everything intensively. Place in a water bath and beat with a mixer until a homogeneous mass is obtained, then remove from heat. Beat the mixture with a mixer until a homogeneous mixture of white color is obtained (approximately 10-12 minutes).

Gradually and carefully add flour mixed with cocoa and baking powder to the resulting mixture, constantly stirring from the bottom up. Grease the form for baking biscuits with butter and sprinkle with a little flour.

Heat the oven to 180 degrees. Put the dough in a mold and put it in the oven for 30 minutes. Turn off the heat and leave the biscuit in the oven for another 8-10 minutes, then you can take it out and let it stand for 2-3 hours. While the biscuit is cooling, you can start impregnation. To do this, you need to pour sugar with half a glass of water, stir and put on fire until it boils. Stir constantly during the heating process. After boiling, remove the resulting sugar syrup from the heat.

Brew 2 tablespoons of ground coffee in 125-140 ml of water. Pour filtered coffee into sugar syrup, stir and cool. Divide the cooled biscuit horizontally into 2 layers of cakes and soak them with coffee syrup. Beat the cooled cream with a mixer with powdered sugar until you get a thick, uniform mass, which you can spread on one cake, put the second one on it and also spread it on top. Coat the sides of the resulting cake with cream. Pour the glaze on top.
