Cocktail cherry at home

Today, Smakota (Smakotainfo.com) offers to prepare an alternative version of store-bought cocktail cherries – cocktail cherry at home. Of course, our result will be far from the store result. Because, unfortunately, it is impossible to get such a color and taste of cherries at home.

The fact is that for this they use a special variety of cherry – Maraschino. The berries are first soaked for 4-6 weeks in a 1% solution of sulfur dioxide and a 0,5% solution of slaked lime, as a result of which the berries are compacted and acquire an ivory color. Then the pits are removed from them and the fruits are bleached again with sodium chloride, after which they are kept in water for about 24-36 hours, removing discoloration agents from the flesh of the cherries. After that, for a long time, the Maraschino process is kept in a solution of sodium bisulfate for 2 weeks to give them a dense texture. And at the very end of this complex technological process, they are soaked in concentrated sugar syrup with almonds and colored with red food coloring or green mint. Would you like to use such a “chemical” product – probably not.

Ingredients:

  • Cherry – 1 kg.
  • Amaretto liqueur – 500 ml.
  • Sugar – 1 cup.
  • Orange – 1 piece.
  • Cinnamon – 1 stick.
  • Anise – 1 g.

A recipe for making cocktail cherries at home

Sort the cherries and remove the pits, if there are stalks, you can leave them. Put cherries in clean jars.

Grate the orange peel, squeeze the juice from the orange. We add all this to the liqueur. Add sugar and cinnamon to the liqueur, bring to a boil.

Pour the hot marinade over the cherries. We put the cans with cherries in a pan and fill them with water. Sterilize for 20 minutes. And tightly close the lid. Store in a cool place.

In winter, we open and enjoy.
