Coconut zebra holiday cake (without baking)

Sometimes it happens that there is absolutely no time to bake pies before the arrival of guests, and there is absolutely no desire to buy dessert in the store. This is where the recipe will come in handy coconut zebra holiday cake dessert (no baking). In general, it takes 30-40 minutes to prepare, and the taste is simply impeccable. It was done in the morning – at lunch you can treat the guests.

Coconut zebra festive cake (without baking) – ingredients

  • Petit Beurre cookies, 155 g – 8 packages (or any other chocolate cookie).
  • Cream (from 30%) – 1300 ml.
  • Mascarpone – 125
  • Powdered sugar – 7 tbsp.
  • Coconut liquor – 3 tbsp.
  • Gelatin – 4 tsp.
  • Water – 50 ml.
  • Coconut shavings – ½ cup.
  • Currant jam – 450 g.
  • Raphael balls – 12 pieces (optional).

Dissolve gelatin in hot water, leave to cool.

Mix well-chilled cream with sugar, cold mascarpone and cold liqueur, beat well until a homogeneous thick cream is formed.

Add a spoonful of cream to barely warm gelatin, mix well, add two more spoons of cream, mix well again.

Add hardened gelatin to the entire cream mass, beat until smooth.

Divide the cream into 4 parts.

We cover the bottom of the mold (20×35) with parchment, lay out a layer of cookies, grease it with jam, spread a part of the cream on top, repeat this three more times (cream on top). Sprinkle with coconut shavings, decorate with Raffaello balls.

Put the dough in the refrigerator for 5-6 hours.

Cut into portioned pieces so that there is a ball of Raffaello in the middle of the piece.
