Coffee cake with an apple – interesting to prepare and very tasty cake. Moist cakes with an apple, sour jam, mascarpone, coffee and coconut – all the components of the cake are well combined, creating a real delicacy. Such a cake tastes best the next day, when the cakes are well soaked with cream and jam. It is very tasty! Recommended for cooking!
Coffee cake with an apple – ingredients
- Cake:
- Oil – 120
- Sugar – 160 g.
- Cocoa – 1 tablespoon
- Milk – ½ cup.
- Ground coffee – 3 tbsp.
- Eggs – 3 pieces.
- Flour – 2 cups.
- Baking powder – 2 tsp.
- Apple – 1 large.
- For the cream:
- Mascarpone cheese – 500 g.
- Powdered sugar – 3 tbsp.
- Instant coffee (fine) – 2 tbsp.
- Cream on top of the cake:
- Oil – 100
- Milk – ¼ cup.
- Sugar – ¾ cup.
- Cocoa – 1 tbsp. (with bangs).
- Instant coffee (fine) – 2 tsp.
- Dry milk – 3-4 tbsp.
- Coconut shavings.
- Additionally:
- Currant jam.
Coffee cake with an apple

Put butter, sugar, cocoa in a saucepan, pour milk, put on fire, melt until the ingredients are completely combined. We add coffee and keep it on the fire for a while. Remove from heat, leave to cool.
Sift a glass of flour to the cooled mass, mix, add eggs one by one, beat.
Mix the rest of the flour with baking powder, sift it into a chocolate mass, beat until smooth.
Grate an apple on a coarse grater for the dough, mix.
Cover the bottom of the mold (18×18) with parchment, grease the sides with oil, and sprinkle with flour. Transfer the dough into the form.
We bake the cake at a temperature of 180 degrees for about 40 minutes, until a “dry match”. Leave to cool. Cut into 3 equal cakes.
Cream
Beat mascarpone with powdered sugar and coffee.
We collect the cake
Lubricate the bottom cake well with jam, cover with the second cake. Spread the cream on the second cake, level it, cover with the third cake, press it down slightly.
Cream on top of the cake
Put butter, milk, sugar, coffee and cocoa in a saucepan, heat until the ingredients are completely combined. Remove the pan from the heat, cool a little, add dry milk, mix well so that there are no lumps. We spread the still warm mass on top of the cake, level it and immediately sprinkle it with coconut shavings.
Put the finished cake in the refrigerator for 4-6 hours.
