Cold soup with peas

In the Mediterranean countries this cold pea soup known by various names. Often it can even be found on the streets of cities in the south of Europe and the north of Africa, as one of the menu items in fast food establishments.

Bright cold pea soup will perfectly save from the heat and will be liked by all guests and relatives. At the same time, it takes very little time to prepare cold soup. This recipe is as simple as possible and available to everyone.

Fry the bacon over low heat. This will take 4 to 6 minutes until the bacon is brown and crisp. We put it on a plate, and pour the fat into the pan.

Add olive oil to the same pan. Add celery stalks cut into small pieces, chopped onions and leeks. Cook on low heat for about 7 minutes until the ingredients become soft.

Pour in the chicken broth and add half of the fried bacon. Throw a sprig of rosemary, salt and pepper.

Cook over low heat for about 15 minutes. Take out the rosemary and bacon. We set aside the rest of the contents of the pan to cool a little and then pour it into the blender bowl.

Add sugar, peas and parsley to it. Grind everything to the state of puree. If necessary, add water or broth so that the cold pea soup does not turn out too thick.

In a small saucepan, bring the cream, finely chopped garlic and another sprig of rosemary to a boil. Simmer on low heat for about 5 minutes. Strain through a strainer and let it cool.

Pour the cooled pea soup into bowls and add a little of our garlic cream on top. Sprinkle the remaining bacon on top, having previously crumbled it into small pieces. You can add a few whole fresh peas. Bon appetit!
