Corn cookies with dried apricots and thyme – ingredients

  • Flour – 140 g.
  • Corn flour – 80 g.
  • Baking powder – ½ tsp.
  • Salt – ½ tsp.
  • Oil – 120
  • Sugar – 120 g.
  • Yolks – from 2 eggs.
  • Honey – 1 tbsp.
  • Milk – 3 tbsp.
  • Dried apricots – 10 pieces.
  • Dried thyme – 1,5 teaspoons (or 2 tablespoons fresh chopped).

Corn cookies with dried apricots and thyme – recipe

Mix two types of flour, baking powder and salt.

Beat the butter together with the sugar until fluffy, add the yolks one by one, beat until smooth. Add honey, milk and dry ingredients, mix well.

Cut dried apricots into small cubes, add them to the dough together with thyme. Mix everything well.

Cover the baking form with parchment. The dough will be quite sticky, so shape cookies with wet hands.

Flatten the cookies to a thickness of 0,5-1 cm.

Bake at a temperature of 160 degrees for 15-20 minutes. Cool on a wire rack.
