Cream of chicken soup

Cold autumn provokes us to feast on warm, aromatic dishes. After all, nothing warms the soul more than comfort at home and fresh, fragrant cream soup. Such a first dish does not need special ingredients, because all the products from the recipe are always at home in the housewives. Ideally, such a variation of pureed soup will be suitable for lunch or even dinner for children.

Cream of chicken soup – ingredients

  • The main ones:
  • Chicken carcass – 1 pc.
  • Baguette – 1 pc.
  • Onion-leek – 1 pc.
  • Butter – 100 g.
  • Walnuts – 50 g.
  • Garlic – 2 cloves.
  • Cream – 150 ml.
  • Wheat flour – 3 tbsp.
  • Olive oil – 1 tbsp.
  • Provence herbs – 1 pinch.
  • Ground white pepper – 1 pinch.
  • For the broth:
  • Celery stalks – 2 pcs.
  • Onion-leek – 1 pc.
  • Onions – 1 pcs.
  • Garlic – 2 cloves.
  • Bay leaf – 2 pcs.
  • Black pepper with peas – 1 tsp.
  • Sea salt – 1 tsp.

Cream of chicken soup – ingredients

Cut the celery and the light part of one leek into large pieces. Peel the onion and cut it into four parts. Peel the garlic.

Boil the broth. Namely, put the chicken carcass in the pan with the breast down, add onion, chopped celery and leek, 2 cloves of garlic, bay leaf, salt and black pepper. Pour everything with water, bring to a boil, reduce the heat and cook for about an hour over low heat.

Strain the broth. Remove the skin from the chicken, chop the meat. Finely chop the remaining leek and garlic. Heat olive oil and 40 g of butter in a small saucepan, add leeks and garlic and simmer for 5 minutes, stirring.

Pour flour and gradually add 1 liter of broth. Bring to a boil and cook over low heat for 5 minutes. Add chopped chicken meat, cream and reheat everything. Beat half of the soup in a blender so that a smooth, silky mass is obtained, mix with unbeaten soup, add white pepper.

Cut the baguette, lightly grease with butter, sprinkle with Provencal herbs and dry in the oven. Chop the walnuts with a knife. Pour the soup into plates and sprinkle with nuts. Serve with croutons.
