Cucumbers are cut for the winter without sterilization

Today we suggest cooking cucumbers cut, for the winter (without sterilization). For such preservation, you can use overgrown cucumbers (only with small seeds). As a result, cucumbers are very tasty and crunchy. We recommend you try it!

Cucumbers cut, for the winter (without sterilization) – ingredients

  • Cucumbers – about 1,5 kg.
  • Horseradish root – 10 cm.
  • Horseradish leaves – 2-3 pieces.
  • Dill – 6 umbrellas.
  • Garlic – 6 cloves.
  • Allspice – 12 peas.
  • Black pepper – 20 peas.
  • Hot pepper (fresh) – 1 piece.
  • For the marinade:
  • Water – 1,5 l.
  • Salt – 3 tbsp.
  • Sugar – 2 tbsp.
  • Vinegar (9%) – 8 tbsp.
  • Coriander (seeds) – 1 tsp.
  • Mustard (grain) – 1 tsp.
  • Bay leaf – 3-4 pieces.

Cucumbers cut, for the winter (without sterilization) – cooking recipe

Prepare 6 0,5 l cans (wash, sterilize), lay out the leaves and root of horseradish, dill, peeled garlic, pieces of pepper, peas of black and allspice.

Cut well-washed and pre-soaked cucumbers into circles about 1 cm thick.

Sterilize the lids and bring the water to a boil.

Pour boiling water over the cucumbers, cover the jars with lids, leave for 15 minutes (do not screw the lids). Drain the water in the sink, fill with new boiling water, leave for 10 minutes.

Bring the water to a boil, add mustard and coriander, salt, sugar, and a bay leaf. Let the marinade boil over low heat for 3-4 minutes, add vinegar, bring to a boil.

Drain the water from the cans into the sink, pour boiling marinade, immediately twist, turn upside down, wrap in a warm blanket. Leave until completely cooled.
