Currant and white chocolate parfait

The name of the dessert Parfait comes from the French parfait – flawless, beautiful. Today, Smakota ( offers to prepare an impeccable and beautiful dessert – parfait with currants and white chocolate. Parfait is usually prepared in two ways – either frozen, then the dessert turns out like ice cream, or simply cooled very well, and the dessert looks like thick cream. We will prepare a parfait in the second creamy version.

Recipe for parfait with currants and white chocolate

  • White chocolate – 150 g.
  • Cream (from 30%) – 500 ml.
  • Sugar – 2 tbsp.
  • Yolks – from 4 eggs.
  • Sour cream (fat) – 2 tbsp.
  • Currants – 3 handfuls.

Separate the yolks from the whites, beat the yolks with sugar. We heat 250 ml of cream (do not boil), introduce the yolk mass with a thin trickle. We beat everything, and, stirring constantly, cook the cream-yolk mixture over low heat for about 10 minutes, until the mixture begins to thicken. Remove from heat, let cool a little.

Break white chocolate into squares and melt in a water bath. Add it to the warm cream and mix well. We leave the mass until it cools completely.

Beat the rest of the verses with sour cream to a thick foam, add to the cooled cream mixture, mix gently.

We wash the berries, sort them, clean them from the stalks. We put 2-3 spoons of ready-made cream in the creamer, berries on top, cream and berries again. There should be a creamy layer on top. Put the parfait in the refrigerator for 3-4 hours. When serving, decorate according to desire and possibilities
