A recipe for making a delicate jelly cake

  • Cheese – 500 g.
  • Sour cream – 180
  • Sugar – 255 g (75 g for the biscuit and 180 g for the cheese layer).

Let’s start with the cake. Beat eggs with sugar, add flour and mix well. We cover the bottom of the form with parchment, grease it with oil, pour the dough into a form (26 cm), send it to the oven heated to 180 degrees for about 10 minutes.

Now let’s deal with gelatin, pour it with 100 ml of water and leave it.

Grind the cheese through a sieve, or twist it in a meat grinder. Add sour cream and sugar to the cheese and mix everything well (you can use a mixer).

We put the swollen gelatin in a water bath, stirring constantly, until it is completely dissolved. Let the gelatin cool a little (not forgetting to stir it periodically) and pour it into the curd mass, mix well.

Place the chopped peaches on the cooled biscuit. Spread the cheese mixture on top. We send the form to the refrigerator (30-50 minutes).

We make peach jelly according to the instructions on the package (usually, you just need to pour hot water over it). When our still liquid jelly hardens, we pour it on top of the cake. If desired, before pouring the jelly into the mold, you can decorate the cake with sliced ​​peaches. We leave the cake in the refrigerator until it hardens completely (overnight is better). And in the morning, you can have such a healthy cake for breakfast.
