Christmas zavyvanets or roll with apples and cinnamon is included in the traditional 12 Christmas dishes, or dishes on Christmas Eve. You can also make any filling for the roll (zavivanets, zavyach): berry, fruit, vegetable, meat, mushroom or fish, but the best option for the Christmas table is sweet and sour apples, pears with cinnamon.

  1. 100 g of warm water approximately 40-45’C.
  2. 25 g of yeast.
  3. 50 g of sugar.
  4. 2 tbsp. flour

It should last longer than 30 minutes.

Dough for curling iron

  1. 150 ml of warm milk or water. If fasting, milk can be replaced with water.
  2. 100 g of sugar and 50 g of honey to make a sweet dough. You can replace honey with sugar, and vice versa, but there must be a little sugar.

The dough should stand for an hour, when it no longer grows, but rather sets, then you need to start working with the dough. Knead the dough very carefully. You can use a food processor, knead the dough at low speeds.

Oil is added to this dough at the very end, when the dough is practically kneaded. the dough should be tight, gradually add flour. Add salt at the end. If you add salt earlier, it can destroy the live yeast and the dough will “sit”.

So that the apples remain bright, they should be soaked in lemon juice.

Peel apples and pears, select the middle.

Cut into slices. Large ones are better, then they will not give much juice. Dry a sweet bun, shortbread. Chop and roll apples, pears (as for open pies).

You can add dry raisins, they will be soaked in juice. Depending on the apples, if they are not very sweet, add sugar.

Mix the dough. If the dough sticks to your hands, add a little flour. We stretch the dough as thin as possible from all sides. Stretch the dough and grease it with oil. Add cinnamon. Sprinkle cinnamon all over the dough. Sprinkle with sugar. We lay out the apples in rows, wrap them, and tape the edges. Lubricate the baking sheet with oil. Make holes in the dough from above. Cover with a towel, leave in a warm place for 30 minutes to 1 hour to let the dough rise.

Bake in the oven for 30-40 minutes at a temperature of 180°C.
