Easter gingerbread

- For the dough:
- Honey – 1 incomplete glass.
- Water – 1 glass.
- Sugar – 1 cup.
- Eggs – 4 pieces.
- Flour – 5-6 cups.
- Vanilla sugar – 1 bag.
- Cloves – 4 pieces.
- Ground cinnamon – 1 tsp.
- Anise – 0,5 tsp.
- Lemon (peel) – 1 piece.
- Soda – 1 tsp. or baking powder for dough – 18 g.
- For the icing:
- Protein – from 1 egg.
- Powdered sugar – 150 g.
- Food dyes or cocoa powder.

Dissolve honey in warm water to get a kind of molasses. Grind eggs until white with sugar (leave one white for glaze), add dissolved honey, mix. Clove flowers, cinnamon and anise should be crushed to a powder in a mortar or coffee grinder and added to the dough. Grate the lemon peel and add to the dough, quench the soda with lemon juice and pour in a packet of vanilla sugar. Knead the dough. The dough should not be tight, but soft, even a little sticky to the hands.
Roll out a part of the dough with a thickness of about 8 mm (the table should be well sprinkled with flour) and cut out egg shapes according to the template (prepare the template in advance, so that it is easier to do this, circle your palm on the cardboard, align the edges so that the shape of the egg turns out, cut out – this will be the template for gingerbread)
Place the gingerbread on a baking sheet greased with butter or lined with baking parchment. Bake at 180-200 ° for about 10 minutes. Gingerbread is thin and bakes quickly, do not forget to watch so that it does not burn.

Whip the glaze from egg whites and powdered sugar. Cover all the eggs with white glaze, and put the rest in a syringe and start coloring.
