Easter sausage at home

Homemade Easter sausage recipe

  • pork (shoulder, neck) – 3 kg.
  • fat – 500 g.
  • salt – 3 tbsp.
  • garlic – 3 cloves.
  • ground black pepper – 1 tsp.
  • allspice – 1 tsp.
  • saltpeter – 2 tsp.
  • water – 1 glass
  • gut.

We divide the meat into two parts. Finely chop one part, grind the lard and the other part. Combine everything in a large bowl, add salt, pepper, allspice, saltpeter (if desired) and mix thoroughly for 20 minutes.

We cover and let it infuse overnight.

The next day, add garlic and a glass of cold water to the meat. Mix everything thoroughly again.

We fill the intestine with the help of a nozzle. We try to let as little air as possible inside. Once done, let the sausage dry a little, and then cook, bake or smoke.
