Egg salad

This simple recipe for a delicious salad comes from Greece. In this country, they don’t really like to throw away food – so everything left over after celebrating New Year or Easter becomes ingredients for new dishes. Egg salad – this is exactly the case, because after the Holy Resurrection, as a rule, a lot of boiled eggs remain.

Egg salad – ingredients

  • hard-boiled eggs – 6 pcs.
  • pickled cucumbers – 4 pcs.
  • sweet pepper – 1 pc.
  • capers – 1 tbsp.
  • dill – several sprigs.
  • olive oil – 1 tbsp.
  • vinegar – 1 tsp.
  • low-fat yogurt – 2 tbsp.
  • mayonnaise – 1,5 tbsp.
  • mustard – 1,5 tsp.

Egg salad – recipe

Peel the eggs, cut them into small cubes. Also cut cucumbers and peppers into cubes of the same size.

Finely chop the dill. You should have about 1 tablespoon of greens.

Mix mayonnaise and mustard in a small bowl. Depending on your own tastes, you can use either spicy mustard or a mild, European version of this sauce.

Add yogurt to the mayonnaise and mustard mixture. Mix thoroughly again. The next step is to add vinegar and olive oil.

In a large bowl, combine the eggs, cucumber, pepper and dill. Pour this mixture with mayonnaise-mustard-yogurt dressing and mix gently.

Cover the salad with a lid and put it in the refrigerator for about 1 hour. After that, serve it on the table. You can decorate with greens or finely chopped red onion. Just a little – not for taste, but to make the salad brighter.
