Eggplants for the winter, preservation – a simple recipe for delicious eggplants for the winter.

For cooking such eggplants we don’t waste much time and such preservation can be done between the usual cooking. Such eggplants stand well at any temperature, even in the conditions of an apartment.

Highly recommended for cooking!

Eggplants for the winter, preservation – ingredients

  • Eggplants – 6 kg.
  • Sweet red pepper – 6 pieces.
  • Hot red pepper – 3-4 pieces.
  • Garlic – 200 g.
  • Vinegar (9%) – ½ cup.
  • Oil – ½ cup.
  • Salt – 2 tbsp.
  • Sugar – 1 cup.

Cut the eggplants into 4 parts lengthwise and crosswise. Cover with salt, let stand for 2 hours.

We clean the seeds from the sweet and hot peppers, grind them in a meat grinder, we do the same with garlic.

Add oil, salt, sugar and vinegar to pepper, bring to a boil.

Wash the eggplants in a colander, boil in boiling water for 4-5 minutes.

Remove the eggplants from the water, pour the prepared spicy mixture, cook for another 5 minutes.

Place the eggplants in jars, fill them with brine, and tightly screw them with metal lids.
