Fattoush oriental salad with tomatoes and asparagus

A traditional dish of the Middle East – fattoush salad, which is quite popular in Lebanon. There are many variations of this dish. Today we offer to prepare an oriental dish Fattoush salad with tomatoes and asparagus.

Bread among the salad ingredients is not so strange. After all, the classic “Caesar” is also not complete without croutons. Let’s prepare all the ingredients Fattoush salad with tomatoes and asparagus. First, slightly dry the pita bread in the oven. What is needed is the Georgian one – the one that is more like bread, and not thin sheets of Armenian pita bread. The result should not be croutons, but just slightly dried bread.

In a frying pan, fry finely chopped garlic in olive oil over low heat for about 1-1,5 minutes until it becomes translucent. Be careful not to burn it.

Add the diced tomato to the pan and continue to cook on medium heat for another 1 minute.

Wash the asparagus stalks, cut off the rough lower part, cut diagonally into pieces about 1,5–2 cm long. Add them to the pan and cook for another 1 minute.

Seasoning Oriental Fattoush salad with tomatoes and asparagus, sumac, salt and pepper. We add dried small pieces of pita bread and stew it all for 1-2 minutes, the pita bread will not absorb all the juices and aromas.
