Flounder with mustard sauce

Flounder is a marine fish that is rich in iodine. After tasting it, you can get a daily dose of iodine, and the fish fillet does not have small bones, so it can be safely given to children. We offer a delicious cooking recipe flounder with mustard sauce based on sherry. Sherry is a Spanish white wine produced according to the solera system – young wine of the same variety is added to oak barrels with old wine. This process is repeated for several years. Thanks to this technology, sherry can contain both 5-year-old wine and 1-year-old wine. The taste of sherry is unsurpassed, and the fish soaked in such wine has a pleasant raisin that your guests will not immediately notice.

Flounder with mustard sauce – ingredients

  • For 4 servings:
  • Flounder fillet – 12 pcs. (~ 80 g each).
  • Lemon juice – 2 tbsp. l.
  • Salt pepper.
  • For the mustard sauce:
  • Cream – 100 g.
  • Sour cream 20% – 220 g.
  • Mustard (Dijon or any sweet mustard) – 2 tbsp. l.
  • Sherry (wine) – 4 tbsp. l.
  • Ground mustard – 1 tsp.
  • Sugar.

Flounder with mustard sauce – cooking recipe

Preheat the oven to 220°, put the fillet on a baking sheet, sprinkle it with lemon juice, salt and pepper.

Mix sour cream, cream, Dijon mustard, ground mustard. Add sherry and sugar.

Pour over the flounder fillet and bake for 12-15 minutes.

Serve with potatoes in uniforms or rice and a salad of fresh vegetables.
