Forest moss cake

“Forest moss” – ingredients

  • For the dough:
  • Frozen spinach (after squeezing) 300g.
  • Eggs – 4 pieces.
  • Oil – 1 cup.
  • A pinch of salt.
  • Sugar – 260 g.
  • Flour – 2 cups.
  • Baking powder for dough – 3 tsp.
  • Vinegar (can be apple) – 1 tbsp. l.
  • For the cheese mass:
  • Sour milk cheese – 500 g.
  • Lemon jelly – 1 pack.
  • Fresh or frozen raspberries – 100 g (optional)
  • Cream – 180 ml.
  • Powdered sugar – 3/4 cup.

Form with a diameter of 26 cm, height of 6.5 cm

Defrost the spinach, grind it with a blender. We separate the proteins from the yolks. Beat the egg whites with a pinch of salt until stiff foam.

Add one yolk to the mass, beat after each one, add sugar in several steps, beat until completely dissolved, pour in oil and beat again. Mix flour with baking powder, sift, add to the total mass, mix with a spoon. At the end, pour in vinegar and add spinach puree one spoon at a time and mix again with a spoon. Pour the dough into the mold and bake at a temperature of 180 degrees for about 40-45 minutes.

Cool the cake and cut it in half.

Preparation of cheese mass for the “Forest Moss” cake:

Dissolve lemon jelly in half a glass of boiling water. We are cooling.

We grind the cheese in a meat grinder or grind it with a blender with powdered sugar and raspberries. Whip the cream in a separate bowl. Add the whipped cream little by little to the cheese, mix until smooth. Carefully pour in the jelly and mix.

Spread the curd mass on one cake, cover with another. We send it to the refrigerator until the cream thickens completely
