Fried rice with broccoli and omelet

Fried rice with broccoli and omelet – ingredients
- broccoli (medium size) – 1 head.
- green onion – 1 large bunch.
- eggs – 4 pcs.
- rice (boiled) – 700-750 g.
- garlic – 2 cloves.
- ginger – 1 piece (2-2,5 cm).
- soy sauce – 4 tsp.
- sugar – 1 tbsp.
- salt – to taste.
- oil – 4 tbsp.
- sesame oil – 2 tbsp.
- rice vinegar – 2 tbsp.
Fried rice with broccoli and omelet – preparation
This dish takes a minimum of time – so you will not have breaks to prepare any of the ingredients while the other components are being prepared. Therefore, it is better to prepare everything in advance and keep it nearby.
Let’s start with broccoli. While holding the stem, first cut off all the inflorescences. If they are a little too big, you can cut each one into several smaller pieces. Cut off and discard the lower, most rigid part of the stem (2-2,5 cm). Cut the rest of the stem into pieces the same size as the florets so they cook at the same speed.
Cut the onion into large pieces – both the white and green parts.
Beat 4 eggs with half a teaspoon of salt.
In another bowl, mix the sugar, soy sauce, and 1 teaspoon of salt. Add finely grated ginger and garlic to the mixture and mix vigorously (it should be like beating eggs).
Time to go to the stove. Heat 1 tbsp of oil in a deep frying pan over medium heat until it begins to smoke slightly. Now pour in the broccoli and onions. Immediately mix well so that the vegetables are coated with oil, and then leave for 4-5 minutes without stirring. This way, the broccoli and onions will burn a little and have the desired appearance. This is important: constant contact with the hot surface is required.
After that, move the vegetables to fry the pieces on other sides in the same way. In a few minutes, the vegetables will have the desired appearance: the broccoli will be tender and fragile, and the onion will be soft. After that, pour them into a bowl.
In the same pan over medium heat, fry the omelette in the remaining three tablespoons of oil. As soon as you pour the eggs, start stirring them constantly with a spatula to get “curly” pieces of chaotic shape and size. 30 seconds or a little more time will be enough. Don’t be afraid to stop when the omelette doesn’t look quite set. He will come later. But overfried eggs will be “rubbery”.
Without removing the omelet from the pan, pour boiled rice and soy sauce, which was prepared earlier, into it. Mix well, then press the mixture to the bottom of the pan with a spatula. Cook without stirring for about 5 minutes so that the rice becomes crispy on one side.
Return the broccoli and onions to the pan and toss with the rice and eggs. Add 3 tablespoons of sesame oil (if not available, choose another according to your taste), rice vinegar and mix again. Bon appetit!
