Galantine from shank – ingredients

  • Roll – 1 kg.
  • Greens – 75 g.
  • Garlic – 4 cloves.
  • Spices for pork – 1 tsp.
  • Salt – 1 tsp.
  • Gelatin – 10
  • Meat broth – 100 ml.

Galantine from shank

Fill the roll with water, boil until the meat separates from the bones.

Allow the knuckle to cool a little, separate the skin. We separate the meat from the bones, cut it into fairly large pieces.

Chop greens and garlic.

Dissolve the gelatin in the broth.

Add greens, garlic, spices, salt, gelatin to the meat, mix.

At the bottom of the mold (9×19,5 or another size) we lay out the skin, with the outer side down, then we lay out the meat, evenly distribute it over the form, seal it.

We put the form in the refrigerator overnight. We cut it, serve it to the table.
