Grated bread with nuts

Grated bread with nuts – ingredients

  • Butter or margarine – 250 g.
  • Yolks – 4 pieces.
  • Flour – about 250 g (+1/2 cup).
  • Baking powder – 1 tsp.
  • Cocoa – 2 tsp.
  • Vanilla sugar – 15 g.
  • Squirrels 4 pieces.
  • Sugar – 1 incomplete glass.
  • Walnuts (chopped) – 1 cup.
  • Plum jam – 4-5 tbsp.

Separate the proteins from the yolks. Leave the yolks at room temperature, hide the whites in the refrigerator.

Mix flour with baking powder and sift, add vanilla sugar, add butter and chop into fine crumbs with a knife. Make an indentation in the resulting crumb with a knife, add egg yolks and knead the dough. Divide the dough into 3 parts. Add cocoa to one, mix well again.

Wrap each dough ball in cling film. We put the dark dough and one light one in the freezer, and the third one in the refrigerator for 30-40 minutes.

Grease a 25×35 pan well with fat. We take the light dough out of the refrigerator, transfer it to a baking dish and roll it out (with a glass or a small roller for rolling out the dough). Grease the dough with plum jam.

On top of the jam, rub the frozen dark dough on a coarse grater.

Beat the egg whites to a thick foam, at the end of the beating, add sugar in several portions, constantly beating. We continue to beat until a thick shiny mass is obtained. Add nuts and mix gently. Spread the nut mass on the grated dark dough.

We take out a ball of light dough from the refrigerator and rub it on top of the nut mass.

Bake in an oven heated to 200 degrees for about 30 minutes. At the end of baking, the zleka “settles”. Before serving, sprinkle with powdered sugar.
