Green tomato salad for the winter

Again, Smakota (Smakotainfo.com) offers to do preservation for the winter. Today we are cooking green tomato salad for the winter. The salad is bright, fragrant with a slight acidity – it will be a real find on your table in the winter season.

A recipe for making salad from green tomatoes for the winter.

Note! Please note that the weight of unpeeled vegetables is indicated in the recipe. From the specified amount of ingredients, about 5 liters of ready-made canned salad is obtained.

Wash all vegetables thoroughly. Peel the pepper from the seeds, remove the stalks, cut into strips. We clean the onion, cut it into half rings. Peel the carrots, rub them on a grater for Korean carrots. Cut the tomatoes in half, cut out the stem and cut into pieces.

Pour water and oil into a thick-walled saucepan, add sugar and salt, mix, cover with a lid and bring to a boil. Remove the lid and pour in all the vegetables, mix, cover again and bring to a boil.

When it boils, mix well again, reduce the heat (to the lowest), and simmer for 10-15 minutes. Pour vinegar into the salad, mix and keep covered for another 1-2 minutes.

We put the salad in sterilized dry jars, filling them to the top, twist tightly. Turn the cans upside down, cover with a blanket, leave to cool completely (about a day).

That’s it, the salad is ready for storage in pantries, basements or cellars. And in winter we open and enjoy the taste!
