Grilled sardines

In Lisbon, there is a special tradition of grilling sardines. In summer, grilled sardines with sweet pepper and Portuguese olive oil are a must-have dish in any restaurant. You can read more about the dishes you can taste in Portugal here.

In order to cook delicious sardines, it is not necessary to go so far, let’s try it at home, but here is the step-by-step recipe:

Ingredients for Grilled Sardines:

  • Sardines – 8 pieces.
  • White peppercorns – ½ teaspoon.
  • Black peppercorns – ½ teaspoon.
  • Pink pepper – ½ teaspoon.
  • Dill – 1 bunch.
  • Garlic – 1 clove.
  • Lemon – 2 pieces.
  • Salt to taste.
  • Olive oil – 3 tablespoons.
  • Fresh rosemary – 8 stalks.
  • Lettuce leaves – 4 pieces.
  • Watercress salad – 8 stalks.

Cooking sardines on the grill

  1. Heat the grill to maximum temperature. Clean the sardines, wash them inside and out and carefully remove the scales. Dry on a paper towel.
  2. Crush the peppercorns with a pestle in a mortar, but do not pound.
  3. Wash, dry and chop the dill. Crush the garlic. Grate the zest of one lemon in a bowl with the pepper mixture, add dill, garlic, salt and olive oil – mix everything.
  4. Wash the rosemary. Put a sprig of rosemary inside each fish and pour a mixture of pepper and dill on top. Turn over to the other side and repeat the procedure. Leave to marinate for another 10 minutes.
  5. Meanwhile, wash the lettuce and watercress leaves. Finely chop the lettuce, spread on plates.
  6. 6. Cut the second washed lemon into 4 slices and arrange on plates.
  7. 7. Grill sardines for 2-3 minutes on each side.
  8. 8. Place 2 fish on plates, on top of the salad and pour over the spicy mixture.
