Homemade ketchup is a proven recipe

Homemade ketchup – proven recipe – ingredients

  • Tomatoes – 5 kg.
  • Onion – 2 pieces (large).
  • Apples – 2 large sour apples.
  • Salt – 3 tbsp.
  • Sugar – 400-500 g (focus on your taste).
  • Vinegar (9%) – 1 cup.
  • Bitter and fragrant ground pepper – 1 tsp.
  • Cloves – 8 pieces (grind in a coffee grinder).
  • Bitter paprika – ½ tsp.
  • Cinnamon – ½ tsp.
  • Citric acid – ¼ tsp.
  • Starch – as needed.

Cut the tomatoes, put them in a pan, put them on the fire, boil them, rub them on a sieve. This step can be skipped, if you have a good juicer (that squeezes the tomatoes until “dry”), then just pass the tomatoes through the juicer.

Grate the onion and apples on a fine grater, add to the grated tomatoes and put on a light fire, after boiling, boil the mixture for 2-2,5 hours.

Add all the spices, salt, add sugar in portions and remove the sample. Add vinegar and, if necessary (if the ketchup is runny), starch diluted in water, boil for a few more minutes and pour into sterilized jars and cover with sterilized lids.
