Hutsul-style pork in pots

Smakota (Smakotainfo.com) offers to cook an extremely tasty dish from the Ukrainian Carpathians – pork in pots Hutsul style. Most Hutsul dishes are characterized by a skillful combination of various products, both of animal and plant origin. Uncomplicated cooking technology, simplicity and availability in the range of products are important components of this cuisine. Despite all this, it leaves an unforgettable impression with its originality.

Recipe for cooking pork in Hutsul style

  • pork – 800 g.
  • pork lard – 4 tbsp.
  • potatoes – 4 large pieces.
  • eggs – 4 pieces.
  • onion – 1 large piece.
  • flour – 1,5 cups.
  • meat broth – 2 glasses.
  • water – 0,5 cups.
  • tomato paste – 1 tbsp.
  • parsley (finely chopped) – 3 tbsp.
  • oil – 3-4 tbsp.
  • salt pepper.

Wash the pork well, dry it, cut it into small pieces, slightly beat it, salt it, pepper it. Heat the pork lard in a pan and fry the meat over low heat until half done (10-15 minutes).

Peel and grate the potatoes on a carrot grater, squeeze out excess liquid. Add 3 eggs, salt and mix well. Heat the oil in a pan and fry small dumplings.

Finely chop the onion. In the pan, where the potatoes were fried, saute the onion with tomato paste until soft.

At the bottom of the portioned pot, put the drumsticks, meat on top, onions with tomato paste on top of the meat.

Knead a stiff dough from flour and water. We make lids for the pots from the dough, grease our “lids” with a beaten egg on top.

We put the pots in a preheated to 180 degrees and stew for 30-40 minutes. Serve hot directly in pots.
